I have a fruit bowl full of sad looking bananas that need to be used up so I thought I would set myself the challenge of making (for the first time) homemade banana bread. I think it’s one of those things people either love or hate, I love it BUT it has to be moist, preferably sweet and nutty.

So with those prerequisites I turned to the wonderful Avoca cafe cookbook which is really great particularly for baking stuff and there it was – a recipe for banana bread with pecans and my own addition of maple syrup.I am going to roadtest it this weekend so will let you know how it goes. I’m hoping it will turn out like the picture above but hey taste is what matters isn’t it.

What a wonderful recipe!

INGREDIENTS

  • 1/2 cup of unsalted butter, room temperature
  • 1 cup of sugar
  • 1 egg, room temperature
  • 1 cup of mashed bananas (about 2 ½ large bananas)
  • 1 teaspoon of baking soda
  • 2 cups of flour
  • pinch of salt
  • 1/2 teaspoon of ground cinnamon
  • 1/2 teaspoon of ground mace or nutmeg
  • 1/2 teaspoon of ground cloves
  • 1 cup of pecans (walnuts and chocolate chips are fine alternatives)

METHOD

1 Preheat the oven to 350°F. Cream the butter and sugar together until light and fluffy. Add the egg and continue to beat until the mixture is light and fluffy.

2 In a bowl, mix the mashed bananas and baking soda. Let sit for 2 minutes. The baking soda will react with the acid in the bananas which in turn will give the cookies their lift and rise.

Sequel to my Easter Banana Bread!

Hello again,

twice in a day! Well, my cake is cooked. It is lovely, round and smelling great. I decided to do a google search for banana cake filling. One of the main weblinks that came up was the website http://www.cooks.com. One recipe on that website was ‘Mama’s Banana Cake Filling‘.

Well, it sounded good and simple to make so I decided to become a bit adventurous. I started making it under low heat. It did take ages to thicken up so if you do make it, please be very patient. However, your patience will be rewarded as when it does thicken up, it becomes this golden banana cream. It tasted delicious!

The most difficult part was to wait for it cool down. Understandably, one cannot put hot banana cream in a cake. I am still waiting for it!! I am going to put it in my cake tomorrow and reward myself with a sizeable slice seeing that it is Easter after all! Pictures are due to follow on both the cake and the banana filling as well as the complete cake.

I had a little dillema today. I have 6 very very ripe bananas. I decided to make a banana bread with a recipe from the BBC website. It was really easy and straightforward to make. I did certainly make a slight change though and added cinnamon and nutmeg. It smelled lovely and tasted divine!

Usually during the holidays I don’t do too much baking. That is mainly because half the of the items made get eaten before they are given… and I can’t blame it all on my husband.

This year we made a bit more, partly because of the cookie exchange I did with my family and partly because of the holiday bake sale at school. The main reason for all the baking though? Pinterest. Oh, Pinterest.

That is one giant truffle….

I really love to cook and bake. Bread is my favorite, but I enjoy the process of cooking just about everything. I enjoy the challenge of new recipes, but at Christmas, I really don’t want to spend all my time in the kitchen. Here are some really easy recipes I enjoy making with the kids. Some are made with white flour and I can’t eat them. I usually don’t mind, but not being able to eat Oreo Truffles makes me a little sad. No one, not even Trader Joes makes whole wheat oreo-type cookies. I still enjoy making them with my kids.:) I got this recipe from the Flylady site and renamed it. (Update–now I’ve gone gluten-free, I found Glutino sandwich cookies to sub for “oreos” and they taste wonderful in the truffles)
